Now that Halloween is officially behind us, it feels like entertaining season begins. That means busier schedules but more gatherings with friends and family. I don’t know about you, but I LOVE to entertain. I probably get it from my mother. As far as I can remember, she was always entertaining and not just during the holidays, it was a year round thing in my house. From tupperware parties to art parties, to fancy dinners, we always had a house full of people.
My mom was from the “fancier” dining era of table cloths, placemats and cloth napkins. When I was young it was my job to press the napkins, so you would think I would grow up to hate them, but I have to admit, I too like to fancy things up a bit at the table, especially when it involves company.
One can say it’s a waste of time to spend hours decorating a table with centerpieces, china, table linens etc. but decorating is such a passion of mine and never feels like work. The one thing I enjoy the most is making people feel special in my home. When you take the time to set a nice table and serve a delicious meal, you are giving away a special part of yourself. During the holidays, I love quick and easy recipes, because that means less time in the kitchen and more time with the guests. This pumpkin cream cheese dip could not be easier and has only five ingredients:
- Cream Cheese
- Maple Syrup
- Pumpkin Pie Spice
- Vanilla Extract
The best thing about this dip… no prep and minimal clean up. Everything goes into a food processor and voila you have an amazingly delicious, creamy, pumpkiny, yummy dip..yes that’s a lot of adjectives and yes I just made up the word pumpkiny.
I like to serve the pumpkin cream cheese dip in a hollowed out pumpkin..yes I’m fancy. Then, I pair it with some ginger snaps and sliced apples around the pumpkin which leaves you with a beautiful yet simple holiday dish.

- ½ c. Canned Pumpkin
- 8 oz. Cream Cheese
- 4 T Maple Syrup
- 2 t. Pumpkin Pie Spice
- 1 t. Vanilla Extract
- Put all ingredients in a food processor and blend until creamy.
- Serve with apple slices or ginger snaps.
