Let’s cool things down with this Pineapple Ginger Faux-Jito, a refreshing twist on a classic mojito.
With summer in full swing, nothing beats the heat like a cold libation. This Pineapple Ginger Faux-Jito delivers, hands down! The title of this drink may be throwing you off a bit with the word faux. Let’s clarify, this drink is a mocktail, a.k.a a cocktail without the alcohol. Now, now, for those of you that may like your drinks a bit boozy, you can always add rum to the recipe for the full blown mojito real deal.
Why is this drink amazing?
- Super refreshing
- Great if your prego, or just don’t drink alcohol
- Made in a blender = quick & easy peasy
- Tastes delish
Having grown up in Florida, and having some Cuban in my blood, I have had my fair share of mojitos. I just love the twist on this drink with the addition of the pineapple and ginger. For this Pineapple Ginger Faux-Jito, I am using ginger essential oil. Yes! you can use essential oils in your drinks! One caveat, please make sure to do your research on the essential oils you choose to ingest. Not all of them are created equally and some can be toxic if not used properly.
Please see my post Essential Oils 101 to find out more about the safety of essential oils. I love using essential oils in drinks and in cooking, not only for the great health benefits, but because they can add such an intense punch of flavor with only a drop.
This drink has become my summer go to drink and after you make it, I think it will become yours too!

Could you use organic liquid Stevia and how much.
I don’t use Stevia, I have really tried to like it, but just can’t get past the after taste. I would imagine that you could use liquid stevia in this recipe. Given that I do not use it, I am not really sure how to advise on the number of drops. Please let me know if you make the recipe and how it turns out. I would love to share with the readers.
