Moroccan Quinoa Salad with Creamy Curry Dressing

Moroccan quinoa salad paired with a creamy curry dressing. Simple, healthy and delicious!


Ingredients

Salad Ingredients

  • 1 c. Quinoa (3 C . Cooked)
  • 1 Can Garbanzo Beans
  • 2 Scallions (sliced)
  • ½ C. Shredded Carrot
  • ½ C. Golden Raisins
  • 3 T. Chopped Cilantro
  • ½ C. Toasted Pecans (chopped)
  • ¼ t. Salt
  • Arugula (optional)

Dressing Ingredients

  • ½ C. Just Mayo
  • 1 t. Curry
  • 4 t. Apricot Preserves
  • ½ Lemon (juiced)
  • ¼ t. Salt
  • 2 t. Apple Cider Vinegar

Instructions

Salad Instructions:

  1. Rinse quinoa in water and strain.
  2. Bring quinoa and 2 c. of water to a boil.
  3. Reduce heat, place lid on and cook for about 15-20 minutes or until liquid has been absorbed.
  4. Set aside until cool.
  5. Once cool, toss all ingredients together with desired amount of dressing.
  6. Top with fresh cracked pepper to taste.

Dressing Instructions:

  1. Add all dressing ingredients to a high speed blender and blend until well combined.
